2009 Wild Meat Party

Postby cezar » 11:41 pm Aug 22 2009

Every Year, typically the weekend before the first, we have a wild meat party. I apologize for photo quality, and included one from last year, because one pit we use is just a man grunting, patriot loving fire pit.

It's a time to empty the freezers and get ready for the new year. This year we did Deer, Dove, Duck, Wild Turkey, and Pheasant (no Quail this year - I guess we didn't shoot enough to store)

I'm an amateur cook, and love to eat good food. So taking a bird and wrapping it with bacon (even though it's good) is not enough for me.

We do Duck Bites - chicken fried cubed duck.
I introduced Dove Wontons (Wontons filled with fried dove, or any dark meat, with chopped green onions, soy sauce, bacon etc) then fried.
I also did a Deer Stroganoff, using deer tenderloin served over a bread crouton
I made a Hawaiian Turkey - Marinated Wild Turkey sauteed with onions sliced cherry tomatoes, peppers, seeded chopped jalapenos and finished with pineapple served over fried bread (like a sopapilla)..
We bacon wrapped some dove and duck, and grilled them medium rare. Not to bad. It sounds foofy, but this time, more of the wives tried the game, and liked it.

It was fun.
